Food science first began learning and practicing knife skills through cutting fruits and vegetables to make salsa. Some of them learned that how they've always held and used a knife isn't the proper technique. Students also learned about the different knives used to cut different food items and utilizing a mercer rules tool to help with uniform size. Professional knife skills takes tons of practice so we have a long ways to go!
